A Better Day…


This is a tomato, peach and red onion salad I made tonight (from the Food Network Magazine).  It was excellent!  The salad dressing was red cider vinegar and olive oil.  I added some mint from my garden to give it that something extra.

I spent my day off at the pool with a friend.  My pool membership is at a marina called Herrington Harbour.  It is truly one of the nicest marinas I've ever been to, and the model to which I measure all marinas.  We took a walk around the immaculately kept grounds (neither one of us brought our cameras) and saw so much wildlife, pools of tiny fish, a swimming snake, a muskrat busily stuffing grass into its cheeks, and ducks.  Lunch at Mangos was also delicious.

A good day today.
