Life is good.
The temperature is below average here in South Florida, like it has been all winter here, and everywhere else (and REALLY windy). Yesterday, 67 degrees for the high. The normal high is close to 80. At least it was a sunny day.
At least no walking around in a winter coat.
Instead walking around South Beach, and drinking mojitos with Mom.
And a bonus recipe for a quick dinner:
Roasted Vegetables with Pasta in a Garlic Cream Sauce
2 broccoli crowns, cut into bite sized pieces
1 large onion
1 8 oz. package mushrooms
4 oz. cream cheese, softened
1/4 cup olive oil
1 tbsp. Montreal Steak Seasoning
2 cloves of garlic, finely chopped
6 oz. bowtie pasta
Combine broccoli crowns, onions and mushrooms in olive oil and steak seasoning. Spread on a foil lined baking sheet and bake at 450 degrees for 20 minutes.
Combine cream cheese and garlic, set aside.
Boil water and cook pasta according to package directions
Drain pasta, and add cream cheese mixture. Combine until smooth. Spoon pasta into bowls, top with vegetables. Serve immediately with garlic bread if desired. Serves 2.
